½ cup granulated sugar
½ cup light brown sugar
1 Tbsp ground cinnamon
1 tsp salt
16 oz. unsalted nuts (I use pecans)
1 large egg white
½ tsp vanilla extract
1 tsp water

Directions:
Directions:
Preheat oven to 300º. Line a large baking sheet with parchment paper. Add sugar, brown sugar, cinnamon, and salt to a bowl and stir to combine. In a separate large bowl, whisk the egg white, vanilla, and water until it turns to a frothy white consistency. Add the pecans (or alternate nuts) to the egg whites mixture and gently toss to coat. Then add the cinnamon sugar mixture and stir gently until the pecans are well coated.
Spread the pecans into a single layer on the prepared baking sheet. Bake for about 40-45 minutes, stirring every 15 minutes. Remove from the oven and allow the pecans to cool completely on the baking sheet. Sugar will harden during this process.

I originally made these to put on top of a sweet potato casserole for a Friendsgiving but everyone also snacked on individually and said they couldn't believe they paid $10+ at the fair for these types of nuts. These are also a great item to add to a homemade charcuterie board.
