Ingredients: 1 c softened butter 1 c granualated sugar 1 t baking powder 1 t baking soda 1/2 t salt 1/2 t cinnamon 1/2 nutmeg 1 egg 1 t vanilla 1/2 15 oz can pumpkin 2 c flour
FROSTING 1/2 c butter 1/2 c brown sugar 1/4 c milk 1 t vanilla 3-4 c powdered sugar ground cinnamon to sprinkle on top

Directions:Preheat over 350º. In a large bowl beat 2 c butter with electric mixer on medium speed for 30 seconds. Add granulated sugar, baking powder, baking soda, salt,1 t cinnamon and the nutmeg. Beat until combined. Beat in the eggs and 2 t vanilla until combined. Beat in the pumpkin. Beat in as much of the flour as you can with the mixer. Stir in remaining flour with a wooden spoon.
Drop dough by heaping teaspoons 2 inches apart on ungreased cookie sheets. Bake for 10-12 minutes until tops are set. Transfer to wire racks nd cool.
For FROSTING- in a small saucepan heat the 1/2 c butter and brown sugar until melted and smooth. Transfer to medium bowl. Stir in milk and1 t vanilla. Beat in powdered sugar until smooth. Spread frosting on cookies. Sprinkle with additional cinnamon if desired. |
