2 Cups Buckwheat Flour
1 package of yeast dissolved in 3 T warm water
1 t salt
2 T Dark Molasses
1 quart Buttermilk

Directions:
Directions:
Mix all ingredients above to create the "starter". Store on the counter overnight or over a couple nights. Stir when batter has risen over edge and knock down and let rise again.
When using batter, take portion needed and put in a new bowl. Add melted butter (3 cups of the starter. Add more buttermilk and 1t baking powder per cup of starter. Add 1 t baking soda in ¼ cup warm water. In order to continue starter for next day, add to old batter more flour, salt, molasses and buttermilk.
Heat griddle to temperature that when you drop water onto the griddle it dances. Griddle should be heavily buttered. When eating you must use butter and REAL maple syrup.
