1 pound dried green split peas, sorted and rinsed
1 smoked ham hock
1 medium potato, small cubed
2 medium onions, chopped
3 carrots, sliced or chopped
3 celery ribs, chopped
3 chicken bullion cubes
10 cups water
salt and pepper to taste

Directions:
Directions:
In large pot add water to split peas and soak for several hours. Add rest of ingredients and bring to a boil. Reduce to a simmer and cook for about an hour and a half or until done. You may use an immersion blender for a smoother soup.

Add water if soup gets too thick.
