STRAWBERRY CAKE

* 1 (18.25 oz) box white cake mix

* 1 (3 oz) box strawberry flavored instant gelatin

* 1 (15 oz) package frozen strawberries in syrup, thawed and pureed

* 4 Large eggs

* 1/2 cup vegetable oil

* 1/4 cup water

1. Preheat oven to 350º F.

2. Lightly grease 2 (9-inch) round cake pans.

3. In a large bowl, combine cake mix and gelatin.

4. Next add the 15 oz of strawberries in syrup, that were thawed and pureed.

5. Then the 4 large eggs,

6. The 1/4 cup vegetable oil,

7. And the 1/4 cup water.

8. Beat at medium speed with electric mixer until smooth, scraping sides of bowl
often.

9. Pour into the 2- 9 inch prepared round cake pans.



10. Bake for 20 minutes or until a wooden tooth pick inserted into the center of
each cake pan, comes out clean.

11. Let cool in pans for 10 minutes.

12. Remove cakes from pans and cool completely on wire racks.










 

STRAWBERRY CAKE FROSTING

STRAWBERRY CREAM CHEESE FROSTING:

* 1/4 cup butter, softened

* 1 (8 oz) package cream cheese, softened

* 1 (10 oz) package frozen strawberries in syrup, thawed and pureed

* 1/2 teaspoon strawberry extract

* 7 cups confectioners' sugar

* Fresh strawberries sliced for garnish, optional

1. In a large bowl beat together 1/4 cup softened butter and the 8 oz softened
cream cheese at medium speed with an electric mixer until creamy.

2. Beat in 1/4 cup of the strawberries in syrup, that were thawed and pureed (the
rest of the puree is leftover but can be used in fruit smoothies, etc.),

3. Along with the 1/2 teaspoon strawberry extract.

4. Next gradually add the 7 cups of confectioners' sugar beating until smooth.

5. Carefully place one of the 9-inch round cakes on a cake serving plate of choice.

6. Spread frosting on top of cake.

7. Then add the 2nd, 9-inch round cake on top of the 1st. (Make sure to get
enough frosting between the two layers.)

8. Spread remaining frosting on top of both layers and town the sides of the cake.

9. Optional: Garnish with sliced fresh strawberries, if desired.
