1 4 to 5 lb. "Eye of the Round" beef roast
2 tbsp. vinegar or hot pepper sauce
c. flour
1 med. onion
salt
pepper
c. cooking oil

Directions:
Directions:
Sprinkle roast with vinegar, salt pepper and rub with flour. Heat oil in Dutch oven over medium heat. Place roast in oil and brown on all sides. Place onion beside roast and cook until clear. Add 1 cup water and turn heat down to low; cook for 2 hours or until tender; add more water as needed.

This is good served over rice.
