Ingredients: 4 C HOT water 3 Tb oil 3 Tb sugar
2 C flour
1 egg, beaten
3 T SAF yeast (or any instant yeast brand) 1 C flour
1 C HOT water 1 T salt
3 C + flour

Directions:Prepare cookie sheet cooking spray or parchment
In mixing bowl, start with hot water, oil and sugar, mixing to dissolve sugar
Add 2 C flour, continue mixing until smooth, about 1 min
Add beaten egg
Add in 1 C flour and yeast together, mix 15 seconds until incorporated
Add salt
Add enough flour to make dough JUST beyond gooey and still a little sticky.
Mix 6 minutes
Rest 10-15 min until dough starts to rise.
Using oiled hands, pinch a tennis ball-size piece of dough and form into a 3" ball. Push dough up through a circle formed with your index finger and thumb, stretching the outside of the dough. Twist, pinching off the dough. Place side-by-side, just touching, on cooking sheet. 4-5 across, 6 rows
Brush with egg white Sprinkle with sesame seeds, optional.
Let rise to double in size and dough is very soft to the touch.
Place in preheated 375º oven
Bake 20 min or until dark golden brown

Cinnamon Rolls |

Ingredients: 1 roll dough recipe
1/2 C butter 1 - 1 1/2 C sugar (or brown sugar) 2 - 3 Tb cinnamon
raisins - optional
Cream cheese frosting: 8-oz cream cheese, 2 Tb milk, 1/4 C butter, 1 tsp vanilla, 1/2 tsp salt, powdered sugar

Directions:Prepare cookie sheet or two cake pan with parchment or spray oil
Scoop dough out onto floured surface.
Roll into a 12" X 30" (approx) rectangle, about 3/4" thick
Soften butter, spread on dough evenly Sprinkle on sugar and cinnamon Add raisins ( I always do half with and half without)
Starting with one long side, snuggly roll dough into log. It should be approx 5" in diameter.
With a piece of sturdy string, cut 1 1/2 to 2" discs and place on prepared cookie sheet, barely touching.
Set in warm area to raise till puffy and double in size while preheating oven to 375 degrees
Bake rolls until dark golden brown. Check under-side with spatula to make sure rolls are not doughy .
Cool slightly and frost.

Notes: The most important factor is making sure rolls are completely baked on the bottom.
May 3 Tb orange juice and 1 tsp orange zest to frosting for flavor variation
