4 boneless/skinless chicken breasts
1 bunch fresh broccoli
1 head of fresh cauliflower
2 large cans cream of chicken soup
milk or half & half
8 oz. Swiss cheese

Cube chicken and boil until fully cooked While chicken is cooking, chop broccoli and cauliflower. When chicken is almost done, I put the chopped veggies on top of the chicken and cover so they are partially steamed. Drain chicken and veggies and put in a sprayed 9x13 baking dish. Open the 2 cans of cream of chicken soup, and put them in a sauce pan on the stove. Add 2 cups of half & half ( you can use any milk here...2%, whole, heavy cream...whatever you have on hand. The more fat that is in the milk, the richer the sauce will be. The key is to drain the chicken and veggies well. Keep in mind that the veggies both contain water, so you want your sauce to be a little on the thick side before it goes in the oven. Once the sauce is heated through, add your cubed swiss cheese, and stir. Pour sauce over the chicken and veggies. Cover with foil and put in a preheated 350 degree oven for 1 hour. Serve over white rice. For rice, follow directions on box.

Original chicken divan is made with cream of mushroom soup, and cheddar cheese. The first time we had it was made by Jeff Hock's 1st wife, Sue. They invited us over for dinner, and we loved it. I asked her for her recipe, and of course, changed it up to our liking. That is why it's made with cream of chicken, and swiss cheese. I also added the cauliflower. This has always been one of Dad's favorite dinners. As soon as he walks in the door from work, and sees what Ive made, he says " What did I do to deserve this?"

And of course, Ive always served the flaky biscuits to go with it !!
