2 cups white rice (jasmine works well)
1/4 cup olive oil
1 tsp garlic powder
4 cups hot water
4 beef bouillon cubes
8 oz Velveeta
1/4 cup butter
2-3 jalapenos, whole without stems

Directions:
Directions:
Combine all ingredients in a pot. Cook over low heat until thickened, about 20 minutes. Can also cook on low in crockpot for 2-4 hours. Serve with enchiladas, tacos or other Mexican food.
