4 skinless, boneless chicken breasts
1/2 C dry Breadcrumbs
1 C finely shredded Parmesan cheese
1 1/2 t oregano
1 large egg
1/8 t salt
2 T olive oil
3/4 C mozzarella cheese
1/2 c marinara sauce

Directions:
Directions:
place chicken breast flat sides down on a sheet of plastic wrap
cover with another sheet of plastic wrap
pound breast to about 1/2 inch thickness
pat dry with paper towel
In a bowl, combine breadcrumbs, parmesan, and oregano
In another bowl, lightly beat egg and salt
Brush both sides of chicken with eggs
lightly coat with crumb mix
Warm oil in a large skillet over medium-high heat
when oil shimmers add chicken
cook 3 min per side until golden brown
Sprinkle mozzarella evenly on top of chicken in last min of cooking
Transfer breast to serving plate
meanwhile, warm marinara sauce in microwave or small saucepan for 1-2 min
spoon over each breast
Serve immediately
