1 cup chopped onion
1/2 cup celery
1/2 cup carrots
1/2 cup chopped red bell pepper
1/2 chopped bell pepper
1/2 chopped yellow bell pepper
1 Cup chopped Granny Smith apples
1 Tablespoon Mayonnaise
1 minced green jalapeno
salt to taste
can add rice for rice salad or hominy for hominy salad
