1 cup flour
2 Tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 egg, beaten
1-1/2 cups milk
2 Tbsp olive oil

Directions:
Directions:
Mix dry ingredients in bowl that has a pouring spout. Combine milk, egg and oil in separate smaller bowl. Pour into dry ingredients, mixing gently until barely mixed. Don't worry about lumps.

Pour pancake mix onto greased griddle, about 350, medium heat. This recipe makes 6-8 pancakes about 4".

Additions to pancake include chocolate chips or huckleberries.
