1½ lbs tortellini (meat or cheese)
⅓ cup red wine vinegar
1½ tsp deli style mustard
salt and pepper (to taste)
1 Tbs + 1⅓ cups olive oil
1 Tbs fresh minced parsley
1 Tbs dill
2 tsp dried basil
6 oc shredded prosciutto
2 julienned red peppers
½ cup thinly sliced scallion
⅓ cup pinenuts
1½ freshly grated Parmesan

Directions:
Directions:
Bring 6 quarts water and 1 tsp olive oil to a boil
Add tortellini and boil, stirring 3-5 minutes or until al dente
Drain them and cool them under cool running water, drain well
In a large serving bowl, combine vinegar, mustard, salt, and pepper to taste. Add 1⅓ cups olive oil in a stem, beating the dressing until it is emulsified
Stir in the parsley, dill, and basil
Add tortellini with the remaining ingredients and toss gently
Chill salad, uncovered, at least 1 hour

Dad also got this recipe from Jerry, his co-worker at the Headliner Salon in SLC. He use to make it for special occasions and everyone always loved it! He would buy the tortellini and the prosciutto at an Italian deli in SLC (my Mom doesn't remember the name).
