Ingredients: 4 slices French bread (optional crust removed) ¾ lb country sausage 1 cup grated cheddar cheese 1 cup + 2 Tbs milk 2 eggs ½ tsp dry mustard dash of cayenne pepper ½ can mushroom soup ¼ cup milk

Directions:Preheat oven to 325ºF Cube and place French bread at the bottom of a greased baking dish (11 x 7.5 x 2) Cook and drain sausage and place over French bread Sprinkle the cheddar cheese Beat together the 1 cup + 2 Tbs milk, the eggs, and the mustard and pour over the top of the bread, sausage, and cheese Combine the mushroom soup and ¼ cup milk, and pour over the top Bake for 30-35 minutes (can be made the night before and refrigerated overnight) |

Notes: This was Dad's classic Christmas morning recipe and I was so excited when I found the original copy, taken from none other than the Mountain Fuel Supply "Breakfast Brighteners" book! I'm pretty sure Dad doubled this recipe, as I remember him using the whole can of soup (but I could be remembering wrong). I don't remember Dad cubbing the bread? And for some reason I always thought he topped it with cheddar cheese? So he may have made his own adaptations. I have cooked this recipe many times camping in a dutch oven and have made many variations! I have sautéed extra mushrooms and added it, added broccoli and spinach, and even used vegetarian sausage (insert gasp here)! And of course, we always make this the night before Christmas. It is so easy and so delicious.
