4-2/3 cups part-skim Ricotta Cheese
1 pound shredded Mozzarella Cheese
1 cup and 3 tablespoons grated Parmesan Cheese
4 Eggs
2 teaspoons dried Parsley
Salt & Pepper to taste
2 (16 ounce) jars Spaghetti Sauce*
11 ounces Manicotti Pasta

Directions:

Cook manicotti in boiling water until done. Drain, and rinse with cold water.

Preheat oven to 350 degrees.

In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, and salt and pepper. Mix well.

Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.

Bake 45 minutes, or until bubbly.

About an hour and a half.

*If I have time I like to make my own sauce or a couple of cans of Cento Italian style Tomato Sauce is delicious too.

Dad prefers this with a meat sauce but I like it best just as recipe is. The addition of a meat sauce distracts from the cheese filling. For me it's all about the Cheese!
