Ingredients: 3 cups all purpose flour 1/2 of sugar 3 teaspoons baking powder 1/2 teaspoon salt 1/2 cup cold butter 1 egg 1 cup buttermilk 1 tablespoon grated orange peel 1/4 cup mini chocolate chips optional: handful of cranberries

Directions:1. In a large bowl, combine sugar, four, baking soda and salt Cut in cold butter until it resembles course crumbs. I use a stick of butter on a cheese grater - it's easy and breaks the butter up nicely. It's usually quick and even to mix the butter in the dry mixture with your hands so it's not over mixed.
2. Whisk together egg and buttermilk. Stir into crumb mixture until moistened. Stir in orange peel and chocolate chips (I also toss in a bit of juice from the orange). Kneed in bowl about 8 times. Should not be sticky all over your hands so add a pinch of flour if you need to dry it out a bit.
3. Scoop ice cream scooper size rounds onto a greased baking sheet. Bake at 375 for 16-20 minutes or until golden brown. Serve warm
* They freeze well - The dough can be scooped out onto a cookie sheet, frozen and then stored in a freezer bag for later so you can take out as many as you'd like to bake at a time.
* I don't always do this but you can combine 1 egg with 1 tablespoon of milk and brush it on the top before baking the scones (can also sprinkle sugar on this glaze too). It gives them a golden shimmer. |
