2¼ c. (11¼ oz.) all purpose flour
1 tsp. table salt
¾ tsp. baking soda
12 TBS unsalted butter, melted
1 c. packed (7 oz.) light brown sugar
½ c. (3½ oz.) granulated sugar
1 large egg PLUS 1 large egg yolk
2 tsp. vanilla extract
1¼ c. (9 oz.) plain M&Ms

Preheat oven to 425º with oven rack in middle position. Whisk melted butter, brown sugar, and white sugar in large bowl until thoroughly combined, about 30 seconds. Whisk in egg, yolk, and vanilla until fully combined and mixture looks emulsified, about 30 seconds. Whisk in salt and soda. Add half of flour, and stir with a wooden spoon or spatula to combine. Stir in M&Ms and the rest of the flour until just combined. Divide dough into 16 portions (2¼ oz each). Roll into smooth balls and evenly space on two baking sheets. Use your hand to flatten each ball into a ¾-inch disc. Bake cookies one sheet at a time for about 8 minutes, until the centers are puffed and still very blond. Cookies will seem underdone, but this will keep them from turning hard. Cool on sheets for 5 minutes, then transfer to a cooling rack and cool 10 minutes before serving.
