2 cans Eden black soy beans with liquid) or 30-32 oz homemade)
2 Tbsp. Bacon grease or olive oil
2 cloves garlic, minced or pressed
1 jalapeņo, chopped fine
2 tsp cumin
1 tbsp chili powder
1 1/2 tsp sea salt
2 limes juiced
Shredded jack cheese (or cojita if you have it)
Chopped cilantro

Directions:
Directions:
Drain beans and save liquid.
Stovetop Method: Add all ingredients except half of the bean liquid to a pot. Bring to boil. Lower temperature and simmer for 20 minutes.
IP Method: Add all ingredients to IP including all of the bean liquid. Set the IP on Medium for 10 minutes. Quick release of pressure.

For either method, remove from heat and blend with immersion blender until smooth, adding more liquid as needed. Adjust seasonings.

Serve with shredded cheese and cilantro, if desired.
