Stand mixer or food processor
2 1/2 sticks (10 oz, 282g) unsalted butter, softened to room temperature
1/2 cup plus 2 tablespoons (5 oz, 141g) granulated sugar
1 egg
1/2 tsp vanilla
3 cups flour
1/2 tsp salt

Pate sablee:

Shortbread cookie dough or a great tart shell dough
1 cup, plus 1 tablespoon, room-temperature butter
1⅓ cups confectioners' sugar
cup almond flour
teaspoon kosher salt
2 eggs
3 cups all-purpose flour

Pate choux:

Cream puffs, eclairs, etc This is a long recipe ( directions ) so search for this one separately

Pate Fueillettee (fuh Wee yeh TEE )
