3 cups flour
1/2 tsp salt

Pate sablee:

Shortbread cookie dough or a great tart shell dough
1 cup, plus 1 tablespoon, room-temperature butter
1⅓ cups confectioners' sugar
cup almond flour
teaspoon kosher salt
2 eggs
3 cups all-purpose flour

Pate choux:
