Ingredients: 1 lb ground (or diced) chicken (can use a roasted chicken and cut up) 1 tbsp vegetable oil 1 head butter, bibb or iceberg lettuce, pull leaves apart 1 tsp sesame seeds for garnish cilantro leaves for garnish (* if you like) 1/2 large onion diced 1/2 c fresh shitake mushrooms, diced w/stems removed (4-5) 1 8 oz can water chestnuts, drained and chopped 2 scallions, chopped, white and green parts separated 1 jalapeno, minced (*optional for spice)
Sauce: 2 tbsp soy sauce 1/3 c hoisin sauce 1 tbsp black rice vinegar (substitute: rice wine vinegar) 1 tbsp Shaoxing wine (substitute: any cooking wine) 1.5 tsp grated ginger 2 cloves garlic, minced 1 tbsp chili garlic sauce (*optional for spice) 1 tbsp sesame oil salt to taste

Directions:1. Add all ingredients for the sauce in a bowl, mix together, set aside. 2. Heat a large pan over high heat and add 1 tbsp of oil and cook raw chicken 4-5 minutes until it's almost cooked through. 3. Add onions, mushrooms, white part of the scallions and jalapenos into the pan. Stir fry together, 1-2 minutes. You can add cooked chicken at this point. 4. Add in the water chestnuts and the sauce and stir fry for 4-5 minutes. Add in the green part of the scallions and turn off the heat. Garnish with sesame seeds and cilantro. Serve inside lettuce cups. |
