1 boneless beef top sirloin steak trimmed. (about 1 and ¼ pounds)
2 Tablespoons lime juice
3 garlic cloves, pressed
1 Teaspoon grouond cumin
¼ teaspoon salt
1 Tablespoon vegetable oil, divided
1 Medium onion, cut into thin wedges
1 medium green bell pepper, cut into thin strips
1 Cup thick and chunky salsa
½ Cup pitted ripe olices sliced
8 (6-7 inch flour tortillas, warmed
Optional Toppings:shredded Mexican cheese blend, Sour cream and fresh snippped cilantro.

1. Cut steak lenghthwise in half and then crosswise into ¼ -inch strips.in a bowl combine beef with lime juice, garlic, cumin and salt; toss to coat. Cover and regridgerate 15 minutes to marinate.
2. Meanwhile, cut onion into thin wedges and belll pepper into thin strips.
3. Heat 1 teaspoon oil in Stir-Fry Skillet over high heat until hot. Add half the beef mixture, cook and stir 1-2 minutes or until outside surface of beef is no longer pink. (do not overcook.) Remove from dkillet; keep warm. Repeat using 1 teaspoon oil and remaining beef mixture.
4. In same Skillet, heat temaining 1 teaspoon of oil. Add onions and green pepper; cook and stir 3-4 minutes or until vegetables are crsp-tender. Return beef to Skillet;add salsa and olives (opitional). Cook and stir until heated through.
5. To serve, spoon about ⅔ sup beef mixture in center of each tortilla. Top with cheese, sour cream and cilantro, if desired.

It is a Quick Skillet Fajita dinner. Hotter the skillet the better, do not over cook the beef!
Feel free to add vegies or beef depending on the amounts your family desires. Make sure you cook the beef in half batches to avoid added liquid in your beef. Our family perfers the Salsa on the fajitas as a topping. Enjoy!!!
