1 Cup good quality butter at room temperature
3/4 Cup granulated white sugar
2 1/4 Cup unbleached flour

Cream together the butter and the sugar until creamy and fluffy. Stir in the flour. Knea the dough for 15 minutes, this is a work out, but needed.
Roll the dough on a floured counter until it is ⅜ ". Cut into fingers, or rectangular shapes, or press into a greased shortbread or cookie mold. Place on a lithgtly oiled tray. Make a pattern of holes on each shortbread cookie with a fork. Sprinkle with a little granulated sugar. Bake until golden in a 325º oven until golden, about 15 minutes for cut out cookies, much longer if you are using a large cookie mold, then follow the directions from the mold. Sometimes i use a stamp, to put a design on the cookies before baking them.

This is my favorite cookie recipe. I used to make them for Victor, Nonno, every christmas. Sometimes i will make them for St Patricks day and if i press them into a pan or use a cookie stamp, i may paint them after they cool.
