Polish Corned Beef and Cabbage Recipe

2 pounds of corned beef brisket – You can also substitute a Leprechaun if corned beef is not available
1 pound of mixed white, golden, and red potatoes
1 Yellow Onion
1 Red Onion
2 cups of carrots
1 medium sized head of cabbage
1 cup water or beef broth

Directions:
Directions:
Cut up the potatoes, onions, and carrots into bigger than bite sized chunks

Peel several large cabbage leaves off the head of cabbage and line the slow cooker with them, bottom and sides

Add the water or beef broth into the cooker

Next add the meat – If you like it super tender, cut the meat into slices, otherwise leave the meat whole

Add the potatoes, carrots and onions on top of the meat

Salt and pepper to taste

Cover with several more cabbage leaves

Cook on low overnight, turn to high 40 mins before serving

Serves one hungry Polish man, or a family of four
