! cup raisins
1 cup water
¾ cup shortening or butter
1½ cup sugar
2 eggs
1 tsp vanilla
2½ cups flour
½ tsp baking powder
1 tsp soda
½ tsp salt
1 tsp cinnamon
½ tsp ginger
2 cups rolled oats
1 cup chopped nuts (optional)

Directions:
Directions:
Cook raisins and water at simmer for 20 minutes. Cream in large bowl, shortening, sugar, eggs, and vanilla. Add liquid from raisins to make ½ cup. Mix well. In seperate bowl mix flour, baking powder, soda, salt, cinnamon, and ginger. Add to creamed mixture and mix well. Add rolled oats, nuts and raisins. Drop by teaspoonful onto lightly greased cookie sheet. Bake 12--14 minutes at 375º. Can use half brown sugar and half white sugar.
