1# fresh green beans, trimmed
½# bacon, chopped - approx. 8 slices
½ c. shallots, chopped
2 cloves garlic, chopped
¼ c. sherry wine vinegar
3 T. Dijon mustard
1 tsp. dry mustard
½ c. olive oil
1 c. crumbled feta or gorgonzola cheese
½ c. dried cranberries
salt & pepper

Directions:
Directions:
Cook green beans and boil about 5 minutes. Drain and chill. Cook bacon till crispy. Add the shallots and garlic and saute in bacon grease. Whisk in vinegar, mustards, stirring to loosen browned bits from bacon. Whisk in oil and season with salt & pepper.

Toss beans with warm dressing and top with cheese and cranberries.
