2 Eggs
1/2 Cup melted butter
3/4 Cup Sugar
1 Cup grated zucchini
1-1/2 tsp vanilla extract
1-1/2 Cup flour
1/2 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1-1/2 tsp cinnamon
1/2 Cup Chopped Walnuts opptional

Directions:

Heat oven to 350 F Grease loaf pan

Beat eggs until light and foamy. Mix in sugar, vanilla and zucchini. Mix lightly, but well.
Sift together dry ingredients add to egg mixture and mix well. Add melted butter and mix until butter is incorporated into the batter. Pour into greased loaf pan. Bake for 40-45 minutes or until toothpick comes out clean. Cool in pans for ten minutes and turn out onto cooling rack.
