20 Fresh Jalapenos, 2-3 inches in size
Two 8 ounce packages of Cream Cheese, slightly softened
1 Cup of shredded Cheddar Cheese
1 lb thin (regular) bacon, slices cut in half

Preheat oven to 275 F. Set a wire rack over a baking sheet.

Mix the cream cheese and cheddar cheese together in a bowl until smooth.

Cut jalapenos in half lengthwise, (do not cut the ends of peppers off, this helps keep the cheese mixture in the pepper). Remove the seeds from peppers. Smear the cheese mixture into each pepper, then wrap the bacon (1/2 slice) around the pepper. Secure the bacon to the pepper using a toothpick.

Place wrapped peppers on wire rack/baking sheet. Bake until the bacon is sizzling and done, approx. 1 hour, 15 minutes. Serve immediately. They are also great at room temperature.

Use Ranch or Blue Cheese dressing to dip the poppers in if desired.

These can be cooked in air fryers also. Use the proper settings on your particular device to cook. The air fryer will cook faster, but will cook fewer poppers at a time.
