Turkey broth (from giblets)

Make turkey stock: simmer the giblets along with onion and celery while the turkey is roasting

In a frying pan, cook about 4 T. turkey fat (using the fat from the pan juices) with 4 T. flour and 1/4 c. water, forming a roux. Add 3 c. turkey stock, simmer until thickened, adding more stock as needed.

Use a ratio of 2 T. fat & 2 T. flour per 1 c. stock
