2 tsp. oil
1 small onion, chopped
1 large sweet potato, peeled and cut into ½" pieces
2 cans (14-½ oz.) chicken broth
½ tsp. ground cumin
1 can corn niblets, drained
1 c. mild or medium salsa
1 can (8 oz.) tomato sauce
1 can (15 oz.) black beans, rinsed and drained
2 c. chicken, cooked and cubed
Sour cream, cilantro, and tortilla strips (optional)

Heat oil in 4 qt. pan and saute onions for 3 minutes. Add sweet potato, broth, and cumin. Simmer 15 minutes or until sweet potato is tender. With immersion blender, process until smooth. If using countertop blender cool 10 minutes and blend in 2 batches. Stir in corn, salsa, tomato sauce, and beans. Simmer covered for 5 -10 minutes. Top with sour cream and cilantro and tortilla strips if desired.
