13 - 15 lb. fresh turkey (not pre-brined)
1 box of Kosher salt
Water & Ice
Bay leaves
Better than Bouillon chicken stock

3-5 days prior to Thanksgiving - thaw the turkey in the refrigerator
2 days prior to Thanksgiving - prepare the brine (dissolve kosher salt in hot water, add a few spoons of chicken boullion) add the water with ice into a clean ice chest, throw in some bay leaves, then add the turkey to the brine and allow it to remain 24 hours (completely covered in brine)
1 day before Thanksgiving - remove the turkey from the brine (without rinsing) place on a rack in a roasting pan, refrigerate until ready to roast.

Thanksgiving day:
Pour out any brine from the roasting pan; tie the turkey's legs and wings; season cavities with salt and pepper; stuff both cavities with celery, onions, and a sliced lemon. Lightly salt and pepper the outside of the turkey
Allow to stand at room temperature for an hour before roasting

Roasting instructions:
Preheat oven to 425
Roast turkey at 425 for 20 minutes
Turn oven down to 325; roast 13 minutes/lb
Check temperature with an instant read thermometer about a half hour before you think it's done. The turkey is ready to remove from the oven when the breast temperature reads 155 - 160
Remove the turkey from the oven; cover and allow to sit at room temperature an hour before carving (it will continue to cook, and the juices will be absorbed)
