1 lb. ground beef
3/4 cup chopped onion
3/4 shredded carrots
3/4 diced celery
3 tbsp. butter
3 cups chicken broth
4 cup diced potatoes
3 tbsp. flour
8 oz. Velveeta
1 1/2 cup milk
1 tsp. basil
1/4 cup sour cream
S/P

Directions:
Directions:
Brown beef, drain and set aside. Sauté onions, celery, carrots in basil in the butter. Sauté very well done. Sir in flour to soak up butter. Add broth, potatoes and beef. Cover, reduce heat and simmer until potatoes fall apart. Add cheese and stir till melted Add milk and S/P. Remove from heat and blend in sour cream. Serve!

Don't remember where I got this recipe but it is a Schilling favorite! It reminds me of fall. I found the recipe and made it first in the fall. I remember sitting outside on our brick patio under the oaks and eating it the first time I made it. The trees had turned and leaves were falling. So this soup makes me feel fall whenever I make it :)
