3 C hot water
1/4 C sugar
1/4 C powdered milk
2 tsp salt

1 1/2 Tb yeast
3 3/4 C flour, approx.

Oil for frying

Combine water, sugar and powdered milk in large bowl
Whisk 2 1/2 C of your flour and yeast, together into water mixture

Mix well (add more flour if necessary to make a batter-like consistency)

Using a heavy spoon, start mixing in more flour 1/2 C at a time to make a soft, very sticky dough.

Turn out onto a floured surface and knead dough several times until fairly smooth. Form into a ball and place in bowl sprayed with oil. Let rise 15 or more minutes.

Start heating oil in heavy Dutch oven to med-high
With floured or oiled hands, pinch off a small piece of dough to test oil temperature.

When temp is perfect, pinch off a golf ball-size (or a little larger for a bigger scone) Stretch it flat and carefully place in hot oil. It takes about 1-2 min on each side.
Drain on paper towels.
Serve with lots of good stuff: butter, honey, freezer jam and cinnamon-sugar
