¾ lb pork (ground and cubbed)
1 ½ cups onions
2 cloves garlic
2 Tbs oil
6 Tbs flour
2 cups water
1 tsp oregano
½ tsp salt
8 oz can chopped green chilies

Directions:

Brown the pork with the onions in garlic in the oil
Add 2 cups water and herbs
Sauté until thickened
Add chilies and simmer

This is one of my favorite recipes of my Dad's! He based it on the smothered burrito enchilada style at La Frontera in SLC, UT. The recipe was his own and we found it scribbled on this piece of paper. I remember he sometimes added chopped pork cubes with the ground pork. I think he also used fresh roasted chilies when they were available at the store here in Tucson. He served this as enchiladas or burritos; wrapped in a tortilla and topped with more sauce and Monterey Jack cheese. I believe he also put refried beans inside each tortilla. SO so delicious!
