1 medium head cauliflower, broken into florets
1 c shredded carrots
1 c chopped celery
3 c water
2 chicken bouillon cubes
1 Cajun spice bouillon cube
3 T unsalted butter
3 T all-purpose flower
3/4 tsp salt
1/8 tsp pepper
1/4 tsp smoked paprika
2 c 2% milk
1 c shredded cheddar cheese

Directions:
Directions:
Add the cauliflower, carrot, celery, water, and bouillon to a dutch oven or a large saucepan.

Bring the cauliflower mixture to a boil.

Reduce heat to medium, add the cover and simmer for 12-15 minutes.

In a mddium saucepan, add the butter and melt.

In a small bowl, add the flour, salt and pepper, and seasongings.

Whisk to combine.

Add the flour mixture to the butter, mix to combine.

Graually add the milk to the flour mixture, using a whisk to mix and combine.

Bring the flour mixture to a boil over medium heat.

Cook the flour mixture for 2 minutes, continuously stirring.

Reduce heat to low.

Add the cheese to the flour mixture and stir to combine.

Cook unmtil melted.

Slowly add the cheese sauce to the cauliflower mixture, stirring consistently to combine.
