2 tbsp virgin olive oil
1 small diced onion
2 tbsp minced garlic
2 tbsp diced jalapenos
6 cups low-sodium chicken broth
1 can petite diced tomatoes
½ can black beans (drained and rinsed)
1 rotisserie chicken shredded
1 tbsp lime juice
¼-½ finely chopped fresh cilantro (or ½ tsp dried)
salt and pepper (to taste)
1 tbsp cumin

top with:
tortilla strips
sour cream
shredded cheddar cheese

Directions:
Directions:
In a large saucepan, heat oil. Add diced onion and minced garlic for two minutes. Add cumin for additional 30 seconds or until fragrant. Pour in chicken broth, jalapenos (with plenty of juice), tomatoes, and black beans. Bring to a simmer for 15-20 minutes. Add shredded chicken, cilantro, salt, pepper, and lime juice . Cook an additional 5 minutes. Scoop into bowl and add tortilla strips, sour cream, and shredded cheese.
