2 tsp active dry yeast
1 tsp sugar or honey
1 c water heated to 115º
1 c millet flour
1-1/4 c gluten free flour (Bob's Red Mill 1 to 1 or any other favorite)
1/4 c flax meal
2 tsp xanthan gum
1 tsp salt
2 eggs
3 tbsp olive oil
2 tbsp honey

Directions:
Proof the yeast in a small bowl using the yeast, heated water and 1 tsp sugar/honey. It should get frothy in a few minutes.
Combine the millet flour, gluten free flour, flax meal, xanthan gum, and salt in a medium bowl.
In a large bowl, mix the eggs, olive oil, and honey. Add the yeast/water mix. Stir in the dry ingredients and mix until fully combined.
Transfer dough to a greased 9 x 5 greased loaf pan
Cover with a warm wet towel and let the dough rise. About 45 to 90 minutes for the dough to rise to the top of the pan.
Preheat the oven to 350º Bake the bread for 40-45 minutes. The loaf should rise a bit more while baking and brown.
Cool on a wire rack before removing from the pan. This bread is best the day it's made. Freeze the rest.
