3/4 c mashed potatoes (unseasoned)
1/2 c butter
1/2 tsp salt
2 boxes powdered sugar (16 oz each)
3 c flaked coconut
2 tsp vanilla

Coating:
12 oz chocolate chips
5 squares bitter chocolate
1/2 to 2/3 bar melted paraffin (you'll find this in the baking section, it comes in a box with 4 bars in it.)

Mix the mashed potatoes with the butter, salt, sugar, coconut and vanilla. Shape the filling into on inch balls. Melt the chocolate and paraffin in a double boiler. Dip each ball into the melted chocolate, then place on a paper lined sheet. Chill

I would spread the filling into a parchment paper lined 12 x 9, chill it and cut it into squares. Next, I'd dip it in the melted chocolate.

If you do make the balls, I would chill it before dipping. I think it would hold together better this way.

This recipe was sent to me by Grammie Edie when she was in Florida and saw it in the newspaper and thought it would be something that I would enjoy making. She was right.
