Ingredients: 6 ounce package or 1 cup semi-sweet chocolate pieces 2 Tbsp Butter or Margarine 1 Egg 1 cup sifted powdered sugar 1/2 Tsp vanilla dash of salt 1/2 cup flaked coconut 1/2 cup chopped peanuts More Flaked coconut

Directions:In a medium sauce pan melt semi sweet chocolate pieces and butter over low heat, stirring frequently. Remove pan from heat; cool to lukewarm. Beat in egg until smooth and glossy. Add sifted powdered sugar, vanilla and salt; mix well. Stir in the 1/2 cup flaked coconut and peanuts. Chill about an hour. Form into 1 inch balls. Roll the balls in the additional flaked coconut. Arrange on baking sheet. Chill at least 3 hours or until firm. Makes at least 2.5 dozen balls. |

Notes: Every year on Christmas Eve me and my Mimi make coconut balls. We make a white chocolate dip in the microwave and dip them in and let them harden in the freezer. On Christmas Day, me and my Mimi take the chocolate balls out. At lunch, we eat the coconut balls with bread and French toast. We only make these during Christmas Eve and Christmas Day. These are a good treat on a snowy cold Christmas morning/lunch. We make more of these for dinner. Our day is full of baking on Christmas Eve and wrapping gifts. I love chocolate coconut balls especially when they are warmed up. I always get excited to make these delicious coconut balls; they're always so fun to make! They taste so good! They have a rich and exquisite taste! They are a festive treat for Christmas. I highly recommend making these on a cold day.
