For the meat sauce or leave out the meat to make it vegetarian.
Extra virgin olive oil
1 pound lean ground beef
1/2 onion (finely chopped)
1 bell pepper (red, green, or yellow)
3 cloves garlic (minced)
1 28-ounce can tomato sauce
1/3 cup tomato paste
1 14-ounce can crushed tomatoes
2 tbsp chopped fresh oregano
1/4 cup chopped fresh flat-leaf parsley
1 tbsp Italian Seasoning
½ tsp garlic powder
1 tablespoon to 1/4 cup sugar (to taste, optional)
Salt & pepper to taste
Optional: ½ cup dry white wine

For assembling the lasagna:
Fresh lasagna noodles
15 ounces Ricotta cheese
3 – 4 cups freshly grated mozzarella cheese
1 cup freshly grated Parmesan cheese

Directions:

Heat olive oil and brown ground beef. Drain beef and keep some of the fat for cooking.
2. Add onions, garlic, bell pepper and cook until onions are translucent. Add back beef.
3. Stir in remaining ingredients and bring to a boil. Reduce to simmer on low for 30 minutes (longer if you have time – will bring out more flavour in the sauce).
4. Heat oven to 375 degrees.
5. Boil lasagna noodles, drain and set aside for assembly.
6. In a 9x13 glass dish, add 1 cup of sauce. Add 1 layer of lasagna noodles, 1/3 of the remaining sauce, sprinkle mozzarella cheese on top, add ½ of the ricotta cheese (drop over the entire layer) and ½ of the fresh parmesan cheese. Add another layer of noodles and repeat with sauce and cheese as in first layer. Add final layer of lasagna noodles, cover with remaining sauce and remaining shredded mozzarella cheese.
7. Bake covered with foil for 45 minutes, uncover for the last 10 minutes.
8. Let stand for 15 minutes before serving. Enjoy!

I love lasagna. My mom makes lasagna on my birthday. Sometimes I help her. It is really good. Last year on my birthday, my mom made it when I was opening my presents. Then I watched the lasagna cook in the oven. When the lasagna came out of the oven, I ate the lasagna and it was so good. Then I ate some of my cake. The cake was good also. After that, I watched TV. Lasagna is my favorite food. My mom makes the best lasagna.
