1 cup unbleached all-purpose flour
2 tbsp white sugar
1 pinch salt
2 eggs
1 1/2 cups milk
1/2 tsp vanilla extract
1 tbsp melted butter

Suggested toppings:
Nutella
Bananas, sliced
Maple Syrup
Strawberries
Whip Cream
Powdered Sugar

Directions:

1. Combine the flour, sugar, and salt.
2. Whisk eggs, milk and vanilla in a separate bowl.
3. Whisk in melted butter.
4. Slowly pour a little bit of liquid into flour mixture, stirring the batter until smooth.

Heat a flat griddle or skillet on medium and brush some butter on to the skillet. When it begins to melt you are ready to pour your crepe batter.
Spoon or pour about 1/3 cup of batter on to the skillet. Tilt the skillet around to spread the batter around in a circular motion. When the edge begins to cook and the center of the batter is no longer liquid, flip the crepe. Continue to cook until it is cooked through.
Keep crepes warm on a separate plate, cover with foil.
Place toppings on top of crepe and fold over the crepe or roll up. Dust lightly with powdered sugar before serving.
