Mexican Rice
2- cups of jasmine rice
2- tablespoons of oil
1- 8oz can tomato sauce
4- cups water
3- teaspoons knorr tomato with chicken flavor
2 - teaspoons of black pepper
2 - garlic
1/3 - cup of diced onion


Yummy Eggs
1 - jalapeño
1 - roma tomato
¼ - white onion
2 - eggs
½ - teaspoon salt
1 - teaspoon garlic
1 - teaspoon pepper

Flavored Avocado
1 - avocado
1/2 - teaspoon of garlic
1/2 - teaspoon of pepper
1/2 - Himalayan salt


Black Beans
Nothing fancy.
Open Bush’s Baked Beans - low sodium and warm up on stove.

Mexican Rice

Heat the oil, add rice and brown the rice. Add tomato sauce, water, knorr tomato chicken flavor, pepper, garlic, and onion. Stir all together. Once the liquid starts to boil, cover with a tight lid and turn heat down to simmer. Cook 20-25 minutes.

Yummy Eggs

Chop the jalapeño, tomato, and onion then add to a saucepan to sauté. Add salt, garlic and pepper. Stir and then add 2 eggs and scramble.
*If you want it spicy, leave the jalapeño seeds and membrane in the jalapeño. If not, remove some or all for less spice.

Flavored Avocado

Add it all together and smash with a fork. I call it flavored avocado because I make guacamole a little differently. 🤷🏽‍♀‍
