Directions:1. Combine eggs, sugar, salt, cardamom and yeast.
2. Melt butter in microwave with 1dl of milk.
3. Add melted butter to remaining milk.
4. Pour butter-milk into the egg mixture, and whisk until combined.
5. Add half of the flour to the mixture, mix well.
6. Add remaining half of flour. Knead until smooth.
7. Let the dough rise for 1 hour.
8. Once dough has risen (about doubled in size), roll it out into a rectangle approximately 0.5 inch thick.
9. Mix softened butter, cinnamon, and sugar for filling. Spread evenly on the dough. It's tempting, but don't make the filling too thick, or it won't cook evenly!
10. Roll up the dough. Cut into even pieces. *For a more traditional "ear" shape, cut a trapezoid/triangle shape and pinch at the top-middle until the spiral "ears" poke out of the side. **For a standard roll shape, cut even circles from the roll. Spirals will face up. (Definitely easier!)
11. Brush the tops of the buns with egg wash, and sprinkle with almonds or pearl sugar.
12. Bake on 430º F (225º C) for EXACTLY 10 minutes, then check every minute until done.
The rolls should have a golden color, and be crispy on the outside, soft on the inside! These will NOT taste like gooey, ultra sweet cinnamon rolls you may be used to. This is a drier "sweet" bread. I suggest microwaving any you don't eat right away for 7-10 seconds, and maybe adding a little butter on top! |

Notes: This is a Finnish cinnamon bun reminiscent of the pulla bread my Mummi (Finnish nickname for grandma) used to make. It’s not necessarily a Christmas dish (Finns eat it any time, all the time!), but my family loves to have it around the holidays to remember my Mummi. Despite my hit or miss results with bread dough, I will be attempting this again for Christmas this year!
