8 oz cream cheese, softened
1/4 c butter, softened
2 lbs powdered sugar
1-2 tsp mint extract
Food coloring
1/2 c powdered sugar for rolling mints

Directions:
Directions:
Combine cream cheese and butter in a large mixing bowl until smooth.
Add 1 cup of powdered sugar and mix until smooth
Add mint extract and mix until combined
Gradually, add the remaining powdered sugar until smooth and consistent.
Separate the mixture into four separate bowls and add desired food coloring.
Cover and refrigerate for 2 hours.
Line 2 pans with parchment paper and liberally dust with powdered sugar
Pinch off small amounts of the dough and form into 1 in balls
Gently press the tines of a fork in the top of each ball
Let stand, uncovered, for at least 4 hours
Store in an airtight container
