Slice in half and remove seed of 2 large or 4 small avocados

Once you have removed the flesh, squeeze a little lemon juice onto it and keep it from browning.

In a small bowl:
small handful grape tomatoes, diced in fourths
1/3 cucumber, peeled and finely diced
1/3 orange bell pepper, finely diced
1/4 red onion finely diced
1/4 teaspoon garlic powder

Mix together.

Use one of the following to bind it together:
1-2 Tbsp: hummus or vegan mayo or spicy mayo

Fill avocado shells to the top.

S & P to taste.

Add another squeeze of lemon.
