2 lbs. stew meat flowered in season flour
2 tbs. oil
1 large onion chopped
2 stalks celery chopped
1/4 bell pepper chopped (optional)
1 can whole or diced tomatoes 28 oz.
2 cans tomato sauce 8 oz. and one can water
1 bay leaf
1/2 tsp. Italian seasoning
2 or 3 pealed russet potatoes quartered
3 carrots pealed cut in 1 inch lenghts

Place 1/2 to 1 cup flower in a plastic bag with some garlic salt & pepper
Add stew meat and shake to coat
Brown flowered stew meat in oil in large pot
Add onion, garlic, celery and stir until translucent
Add all the rest of the ingredients except the potatoes & carrots
Simmer on low for 2/1/2 hours stir occasionally so it doesn't stick
1 hour before done add potatoes and carrots cook until tender
If necessary thicken sauce with 2 tbs. corn starch dissolved in water

you can use round steak cut in cubes in place of stew meat and you can cook longer than 2 1/2 hours before adding the carrots and potatoes. Serve in large bowl with green salad and garlic bread.
