3 lbs Yukon gold potatoes, peeled
1/3 cup fresh lemon juice
1/3 cup olive oil
4 cloves garlic, minced
1 tbsp dried oregano
2 tbsp tomato paste
1/2 tsp salt
1/4 tsp pepper
1 cup chicken broth, vegetable will work too!
*2 tbsp lemon cheong, large pieces chopped-see note

Start early in the day to allow for marinating time.

1. Peel potatoes and cut them in to even sized wedges
2. Mix all remaining ingredients together
3. Place potatoes and ingredients into zip lock bag and marinate min 2 hours, all day is best, turning occasionally if not completely covered.
4. Preheat oven to 400 degrees
5. Pour potatoes and marinate into greased 13 x 9 casserole dish. Spread evenly and do not overlap.
6. Roast for 1hr 10 min, turning occasionally till all sides are browned and most of the liquid has been absorbed. Note: sometimes I have to add a little more stock if it absorbed too quickly before the cooking time is done.

We had a version of these in Greece, so delish!
Lemon Cheong is available in Asian grocery stores. It has lots of lemon peel in it, which is why I like to use it. In South Korea, they used this in the coffee shops to make lemon tea. Sooooo good on a cold day! And yes, this jar is from my trip! Almost gone☹️
