1 Tablespoon Lemon Juice
2 Large Eggs
2 Tablespoons Canola Oil
2 Cups All-purpose Flour
2 Tablespoons Sugar
3 Teaspoons Baking Powder
1/4 Teaspoon Salt

Directions:
Directions:
Stir lemon juice into milk and set aside for a few minutes until lumps appear. Beat the milk, eggs and oil in a mixing bowl with a wire whisk. Stir in flour, baking powder, sugar and salt. Gently mix everything together until it’s combined, but still lumpy. Brush a non-stick skillet with canola oil. Heat over medium-high heat. Pour 1/4 cup batter and cook 1 to 2 minutes until bubbles form and pop. Flip and cook until a peek under reveals a nicely browned pancake. Makes about 16 pancakes.
