Ingredients: Ingredients- Large sweet onion, thinly sliced 1 tsp butter 1 cup beef stock 2 cloves of garlic, minced leaver\s from 3 stems of thyme (chopped) 1/2 tbsp. flour 1/2 tbsp balsamic vinegar 1 tsp coconut oil 2 (4 0z each) boneless skinless chicken breasts Salt & Pepper 1/2 cup shredded swiss cheese

Directions:Instructions- Heat the butter in a skillet over medium heat and add the onions. Cook stirring frequently till caramelized. Add small amts of beef stock as needed to keep from burning. Stir in the garlic and thyme and saute one minute. Sprinkle the flour over the mixture and stir until combined. Add the rest of the beef stock and bring to a simmer. Then remove the pan from heat and stir in vinegar. Pour oni9on mixture into a bowl and set aside. Return pan to heat and increase heat to medium high. Add coconut oil. Season chicken with salt and pepper and sear in pan for 3*4 minutes per side or until chicken is cooked through. Reduce heat to low and add the onion mixture over the top of chicken then add the shredded cheese over top. Cover and let cook until the cheese is melted. |
