2 lbs country style pork spare ribs
4 Tb oil

1 1/2 C catsup
3/4 C water
1 Tb worcestershire
2 tsp dry mustard
2 tsp salt
1 tsp pepper
3 T vinegar
1/4 C brown sugar

1 lg onion, sliced

Preheat oven to 325º

Remove excess fat from ribs...country-style are boneless

In heavy Dutch oven, brown ribs on each side in oil *see note

Combine next 8 ingredients to make a sauce and pour over pork

Arrange sliced onion evenly on top

Bake, covered, for 3 hours, basting every thirty minutes.

Uncover for the last 30 min. Ribs should be super-tender

These are the ribs that convinced Kerry to date me. I made them for him when I was living with my friend Vic.
*you can skip browning the meat to save a little time but they won't taste as good.
