2 c. chopped onion (2 or 3 medium onions)
⅔ c. chopped Vlasic Hot Banana Rings (approximately 50 rings, fewer for less "zing")
3 tbsp. butter (that's butter, not margarine)
1 ½ lbs. Monterey Jack (or mozzarella) cheese
Frito's "Scoops" corn chips

Directions:
Directions:
Saute the onions in the butter until they are translucent, but not brown. Stir in pepper rings and saute for another couple minutes. Remove from heat. Cut the cheese into cubes (to help it melt easier) and put in a 2 ½ quart microwave-safe casserole dish with a lid. Pour the onions/peppers on top of the cheese. Microwave covered on high for 6 minutes, then 2 minutes at a time, stirring after each, until all the cheese is melted and mixture is liquid enough to stir. Dip or pour over corn chips. You will need to re-heat in the microwave periodically.
